Everyone loves food. These days you can find restaurants or recipes for almost every type of food wherever you live. Can't find an ingredient locally? Order it from Amazon! This page memorializes some of my favorite meals and the occasional recipe I've cooked up. I hope you enjoy!
I returned to our traditional chocolate for dessert this year. This cake is a triple chocolate mousse cake and it was delicious. I used the America's Test Kitchen recipe, but next time I'll switch out the bottom layer.
To start Lumiri made us some dangerous drinks (no one remembers what was in them.... they were lethal and delicious). We then had a cold berry buttermilk soup (of my own recipe). And then a lemon, chicken, and broccoli pasta.
June 2021 - Rainbow themed lemon shortbread cookies for pride month <3
Lumiri is an awesome smoothie maker.
A work lunch provided by my sweet spouse :)
And here's a "box" breakfast also provided by Lumiri.
For Christmas Lumiri gave me two cookbooks by Kim Joy (from the Great British Baking Show). She has many, many adorable items in her books. I tried the hedgehogs (which are made with almond flour and melt in your mouth) and the bees (which are a honey-flavored shortbread) so far.
For Christmas 2020 I gave Lumiri a sourdough bread "bible" and she's been busily learning to be a bread artisan.
Finnish salmon soup - super light and delicious.
An impromptu sandwich made by Lumiri with fresh mozzarella, bacon, basil, and tomatoes.
French toast topped correctly with berries :)
Thai green curry, a favorite around here!
October 2020 - I tried my hand for the first time ever on a gingerbread house. Lesson learned - do the front of the house *last* instead of first haha. I am proud of the cat though.
I had a really delicious piece of smoked salmon and when we got down to the end of it I decided to make a frittata. It was so, so scrumptious and decadent.
August 2020 - One of my favorite bakes of this year was our submission to Defcon 28 of a Defcon themed cake! I am inordinately pleased with how it turned out. The top tier is still in our freezer as I write these words. The cake itself is chocolate banana. I used some thai bananas that I had lying about, and it made for a really flavorful cake that was moist (but not too moist) with a lovely texture.
We messed up a few parts of this meal, so I'm only posting the ones we did well :)
Notice the old-fashioned pressure cooker made with dough. It worked REALLY (and unexpectedly) well!
Samosa filling in progress....

Onion Bhaji
Mint Chutney

Chicken Biryani
Mango Lassi
This year we had eggplant parmesan for dinner, and I snuck in a salad to try to get some green in Terry. I followed it up with a delicious berry chantilly cake.
